Emeril's Mashed Potatoes
Rich and buttery Emeril-style mashed potatoes - slightly lumpy for texture, finished with heavy cream and white pepper.

- 2 lb potatoes, peeled and diced
- 1 stick butter, cubed
- 0.5 cup heavy cream
- 0 to taste salt and freshly ground white pepper

Place the potatoes in a pot of salted water and bring to a boil. Reduce heat and cook until fork tender, about 15-18 minutes.

Drain the potatoes. Return to the pot over low heat for 1-2 minutes to dehydrate slightly.

Add the butter cubes. Using a hand-held masher, mash the butter into the potatoes.

Add enough cream until the desired smoothness is achieved. The potatoes should still be slightly lumpy for texture.
