Tomato Wild Rice Soup
A hearty tomato and wild rice soup with carrots, celery, and fresh basil — optionally made into a thick stew with pearl barley.

- 1 medium onion, finely chopped or grated
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 tbsp butter
- 2 tbsp olive oil
- 1 can 28-oz crushed tomatoes, plus 1 small can or 2-4 fresh tomatoes, diced
- 2 cup vegetable or chicken stock
- 0.5 cup wild rice
- 2 tbsp fresh chopped basil
- 1 tsp salt and pepper to taste

Brown vegetables in a large pot with butter and olive oil.

Add tomatoes, stock, and wild rice.

Bring to a boil, then simmer gently covered until rice fluffs and opens, about 1 hour.

Season with salt, pepper, and fresh basil. If the soup is too thick, add more stock.

Serve with French bread.
