Quick Onion Pot Roast

- 1 packet envelope onion soup mix
- 3 lb beef roast, trimmed of fat
- 3 tbsp all-purpose flour
- 3 tbsp water

Sprinkle the onion soup mix over the bottom of the slow cooker.

Place the trimmed roast on top of the soup mix. No prior browning is needed — the meat will brown in the slow cooker and form a rich gravy.

Cover and cook on LOW for about 10 hours, or HIGH for about 5 hours, until the meat is very tender.

When done, pour the accumulated juices into a saucepan and skim off fat.

Mix the flour and water into a smooth paste. Add to the saucepan and bring to a boil, stirring constantly until thickened.

Slice the roast and serve with the gravy alongside your choice of vegetables.
