  • 8 lb whole pork butt
  • 0.3 cup black pepper
  • 0.3 cup paprika
  • 0.3 cup turbinado sugar
  • 2 tbsp salt
  • 2 tsp dry mustard
  • 1 tsp cayenne pepper
  • 3 cup chicken stock
  • 1 cup dry white wine
  • 0.3 cup apple cider vinegar
  • 0.3 cup molasses

Instructions

    Mix all rub ingredients; rub pork all over. Refrigerate overnight, then re-apply rub and rest at room temp 2 hours.

    Roast on a rack at 250–275°F, uncovered, about 7–8 hours until falling-apart tender.

    Combine sauce ingredients in a saucepan; boil then simmer until reduced to 1½ cups.

    Pull pork into pieces; toss with sauce. Serve on rolls with extra sauce.
