Breaded Pork Chops en Casserole

Seasoned breaded thick pork chops baked alongside halved tomatoes and pear halves filled with mayonnaise—an unusual and surprisingly delicious retro dinner.

  • 4 thick thick-cut pork chops
  • 1 cup dry bread crumbs
  • 1 tsp garlic salt or salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp poultry seasoning
  • 2 regular tomatoes, halved crosswise
  • 4 halves firm fresh or canned pear halves
  • 4 tbsp mayonnaise
  • 1 tbsp chopped fresh parsley

Instructions

    Preheat oven to 350°F. Slightly moisten pork chops if dry.

    In a shallow dish or paper bag, combine bread crumbs with garlic salt, pepper, paprika, and poultry seasoning.

    Coat chops with the seasoned bread crumbs, pressing to adhere.

    Place chops in a single layer in a large flat ovenproof baking dish.

    Arrange tomato halves and pear halves around the chops. Sprinkle tomatoes with salt and parsley. Fill pear cavities with mayonnaise.

    Bake uncovered at 350°F for 40–45 minutes until chops are cooked through and golden.
