Turkey Oyster Casserole

  • 8 oz broad egg noodles
  • 1 0.5 cup sour cream, divided
  • 5 tbsp butter
  • 5 tbsp all-purpose flour
  • 2 cup turkey broth or chicken stock
  • 3 cup diced cooked turkey
  • 0.5 cup chopped pimientos
  • 0.5 cup sliced ripe olives
  • 1 can (4 oz) sliced mushrooms, drained
  • 1 tsp salt
  • 0.3 tsp black pepper
  • 1 pint oysters, drained

Instructions

    Cook noodles; drain. Mix with ½ cup sour cream.

    Melt butter in a saucepan, blend in flour, then gradually stir in turkey broth. Cook, stirring, until thickened.

    Blend in remaining sour cream. Stir into noodles. Add turkey, pimientos, olives, mushrooms, salt, and pepper.

    Place half the mixture in a greased 2-quart casserole. Arrange oysters in a layer on top, then cover with remaining turkey mixture.

    Bake uncovered at 350°F for 30 minutes.
