Rice Casserole Supreme
Tex-Mex style fried rice casserole with ground beef, raisins, tomatoes, chili and bacon strips — a unique savory-sweet combination with roots in old Southwest cooking.

- 1 cup raw rice, washed and drained
- 0.7 cup raisins
- 4 tbsp oil, divided
- 1 lb ground beef
- 1 small onion, chopped
- 1 small clove garlic, chopped
- 1 tbsp green chile, chopped
- 2 tsp salt
- 15 oz canned tomatoes
- 1 tbsp chili powder
- 2 slice bacon
Instructions

Wash raisins in hot water; drain. Heat half the oil; add rice and fry to a light brown. Remove rice.

Add remaining oil; fry ground beef, onion, garlic and chile pepper about 10 minutes.

Add salt, tomatoes and chili powder dissolved in 1/4 cup cold water. Cook a few minutes.

Mix everything together and cover with strips of bacon.

Bake at 350°F for 45 minutes.
