Orange Nut Bread

A Carolina mountain recipe for Orange Nut Bread.

  • 1 orange
  • 1 cup of raisins
  • 1 cup of pecans
  • 1 cup of hot orange juice
  • 1 teaspoon of baking soda
  • 1 cup of sugar
  • 1 teaspoon of vanilla
  • 1 beaten egg
  • 2 cups of flour, sifted
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt

Instructions

    Using a sharp knife, peel the outer rind from the orange.

    Grind the orange rind, raisins, and the pecans using the finest blade on a food processor and transfer to a bowl.

    Pour in the hot orange juice, mix in the baking soda, sugar, vanilla, egg, and the flour sifted with the baking powder and salt.

    Mix well and pour into a greased loaf pan

    Bake for 50 minutes at 350 degrees.
