Orange-Bourbon Chicken

  • 2 boneless, skinless chicken breasts
  • 6 tbsp butter
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 12 oz frozen orange juice concentrate, thawed
  • 6 tbsp bourbon
  • 0.5 cup slivered almonds
  • 2 tsp butter (for almonds)

Instructions

    Preheat oven to 425°F. Melt 6 tbsp butter in an oven-safe skillet; let cool slightly.

    Turn chicken in butter to coat and season with salt and pepper. Place skinned-side up.

    Bake at 425°F for about 15 minutes, basting occasionally, until internal temperature reaches 190°F.

    Remove chicken to warm plates. Sauté almonds in 2 tsp butter until toasted; season with salt and let cool.

    Add orange juice concentrate to the drippings; stir over high heat until reduced by a third.

    Stir in bourbon and heat through. Pour sauce over chicken and sprinkle with toasted almonds.
