Octopus Cooked In Wine

Simple Mediterranean octopus simmered with olive oil, onions, and dry white wine until tender. A classic preparation.

  • 1 0.8 lb octopus, thawed, cleaned
  • 4 tbsp olive oil
  • 2 each large onions, sliced
  • 1 each bay leaf
  • 0.3 cup dry white wine
  • 1 tsp salt and pepper to taste

Instructions

    Remove head section from octopus. Clean. Wash arms.

    Slice the octopus into bite-sized chunks.

    Cook in olive oil over medium flame about 10 minutes, turning regularly.

    Add onions, bay leaf, seasoning, and wine.

    Cover and simmer gently until the octopus is tender, about 15 minutes.

    Serves 4.
