Lemon Pot Roast (Crockpot)

Chuck roast marinated in lemon juice, garlic, and celery salt, then slow-cooked until fork-tender — bright, citrusy beef pot roast.

  • 2 0.5 lb chuck roast
  • 1 0.5 cup water
  • 0.5 cup lemon juice
  • 1 whole onion, chopped
  • 1 tsp each salt, celery salt, and onion salt
  • 0.3 tsp black pepper
  • 0.3 tsp ground marjoram
  • 1 clove garlic, crushed
  • 3 slice fresh lemon

Instructions

    Place roast in a shallow pan or marinating container.

    Combine water, lemon juice, onion, salt, celery salt, onion salt, pepper, marjoram, and garlic. Pour over roast.

    Cover and refrigerate at least 4 hours or up to 24 hours.

    Remove roast from marinade; place in crockpot. Pour marinade over top. Lay lemon slices on roast.

    Cover and cook on LOW 8–10 hours until very tender. Serve with accumulated pan juices.
