Kolokythia Krokettes (Zucchini Pancakes)

- 3 cup grated zucchini
- 1 tsp salt
- 3 each eggs
- 1 cup grated feta cheese
- 0 tsp minced fresh mint leaves
- 3 tbsp flour
Instructions

Mix zucchini with salt and let stand 1 hour.

Squeeze out moisture.

Add zucchini, cheese, mint, flour and pepper to taste.

Fry 1 tablespoon at a time in butter over medium heat.

Brown on both sides.

Makes 18 pancakes or 6 servings.
