  • 1 1/2 pounds green beans
  • 2 tablespoons butter
  • 1/2 pound fresh wild mushrooms (such as shiitake, cremini, oyster or a combination)
  • Salt
  • Ground black pepper

Instructions

    Trim stem ends from beans. Bring a large saucepan of lightly salted water to a boil. Add beans and cook, uncovered, 5 to 7 minutes, or until tender-crisp. Drain and rinse under cold water to stop cooking.

    Trim and clean mushrooms.

    In a 12-inch skillet over medium-high heat, melt butter and cook mushrooms, stirring frequently, until mushrooms give up their liquid and then reabsorb it, about 10 minutes.

    Just before serving, in a 12-inch skillet over medium-high heat, heat mushrooms and beans just until hot.

    Season with salt and pepper to taste.
