Fresh Pineapple and Cheese Casserole
Unexpected sweet-savory pineapple casserole with sharp cheddar cheese, flour-sugar mixture and a buttery Ritz cracker topping. A classic Southern side dish.

- 2 cup fresh pineapple chunks (or canned)
- 1 cup sharp shredded cheddar cheese
- 0.5 cup granulated sugar
- 3 tbsp flour
- 0.8 cup crushed Ritz crackers
- 0.5 cup butter or margarine, melted

Preheat oven to 350°F. Grease a 1½-2 quart baking pan or dish.

Mix sugar and flour together. Stir pineapple chunks into flour and sugar mixture.

Place in greased baking dish. Sprinkle evenly with cheese.

Add cracker crumbs and spread evenly. Drizzle melted butter over casserole.

Bake at 350°F for 35 minutes until topping is browned and edges are bubbling slightly.

Remove and cool 10-20 minutes. Serve hot or at room temperature.
