Firefighter Chicken Stew

  • 2 medium onions, sliced
  • 1/2 cup carrots, sliced
  • 1/2 cup celery, sliced
  • 3 tbsp. butter
  • 4 lbs. chicken, cut up
  • 1 cup yogurt
  • 1 tbsp. curry powder
  • 1 clove garlic, minced
  • 1 tsp. turmeric
  • 2 tsp. salt
  • 2 qts. water

Instructions

    In large saucepan, saute onions, carrots and celery in butter until soft.

    Add chicken and cook 20 minutes, turning pieces until brown.

    Stir in yogurt, curry powder, garlic, turmeric and salt.

    Cook another 20 minutes on lower heat so as not to burn the yogurt.

    Add water, cover and simmer 1 hour or until chicken is tender.

    Uncover to thicken stew.

    Serve over rice.
