Cilantro Tartar Sauce

- 1 each egg
- 1 tbsp Dijon mustard
- 1 tbsp minced garlic
- 2 tbsp fresh lime juice
- 1 tbsp chopped cilantro
- 2 tbsp chopped red onions
- 1 cup vegetable oil
- 1 to taste salt
- 1 to taste hot sauce
Instructions

Put the egg, mustard, garlic, lime juice, cilantro, and red onions in a food processor. Purée for 15 seconds.

With the processor running, pour the oil through the feed tube in a steady stream until the sauce is thick and emulsified.

Season with salt and hot sauce. Pulse once or twice to blend.

Cover and refrigerate for at least 1 hour before using. Best used within 24 hours. Yields about 1 1/3 cups.
