Ingredients
- 1 egg, beaten slightly ½ cup sugar
- 1 ½ cups flour
- 1 cup frozen blueberries
- ½ cup milk 2 teaspoons baking powder
- ¼ cup oil ½ teaspoons salt

Preheat oven to 400 degrees.

Prepare a muffin pan with cupcake liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a liquid measuring cup, whisk together the milk, eggs, and vanilla extract.

Make a well in the center of dry ingredients and then add the wet into the dry.

Stir gently until a few streaks of flour remain.

Add blueberries and fold gently, being careful not to over mix.

Divide batter evenly into muffin tin, filling to the rim.

Bake at 375 for 10 minutes.

Lower the temperature to 350 and bake for another 10-15 minutes.

Let the muffins cool in pan for 5 minutes before transferring muffins to wire rack to finish cooling.
