Waldorf Pasta Casserole

  • 1 1/2 cups elbow macaroni, cooked
  • 1 lb. spinach, steamed and chopped
  • 2 cups bean sprouts
  • 1 lb. Feta cheese
  • 2 onions, chopped and sauteed
  • 1/2 cup walnuts, chopped
  • 2 eggs
  • 1/3 cup milk
  • fresh ground pepper to taste

Instructions

    Preheat oven to 350F and lightly grease casserole.

    Combine macaroni, spinach, sprouts, cheese, walnuts, and onion in lightly greased ovenproof dish.

    Beat egg and milk together and pour over casserole.

    Sprinkle with pepper.

    Bake for 20 minutes or until bubbly.
