Vinegar Pie

A Carolina mountain recipe for Vinegar Pie.

  • 1 cup of water
  • 2 eggs
  • 2 tablespoons of vinegar
  • 1 cup of sugar
  • 2 tablespoons of flour
  • 1 tablespoons of butter
  • 1/2 teaspoon of lemon extract
  • 1 9-inch baked piecrust

Instructions

    Mix together the sugar, water, eggs, vinegar, and the flour in the top of a double boiler.

    Cook, stirring constantly until the mixture is smooth and thick.

    Remove the mixture from the heat and stir in the lemon extract and the butter.

    Pour into the baked piecrust and let cool.

    Top with whipped cream if you like.
