- 1/4 c. olive oil
- 3 cloves garlic, minced
- 2 medium zucchini, chopped
- 1 small onion, chopped
- 1/4 c. parsley, chopped
- 2 (28-oz.) cans whole, peeled tomatoes
- 1/4 c. fresh basil, chopped
- Salt and pepper

In a large saucepan, heat olive oil.

Add garlic, onion, and zucchini. Cook, stirring, for about 5 minutes.

Add parsley, tomatoes, basil, salt, and pepper.

Break tomatoes apart with a spoon.

Cook over medium heat, simmering, for about 25 minutes.

Stir frequently.
