Vegetable Gumbo
A hearty slow-cooker vegetable gumbo with okra, fresh corn, lima beans, tomatoes, and warming allspice. Simple to prep and ready when you get home.

- 1 onion, chopped
- 3 clove whole cloves
- 1 green bell pepper, diced
- 2 cup tomatoes, diced
- 4 cup vegetable stock
- 1 cup cooked lima beans
- 1 cup fresh or frozen corn kernels
- 1 0.5 cup sliced okra
- 1 tsp salt
- 0.3 tsp allspice

Sauté onion and green pepper with cloves in a little water until soft. Remove the cloves.

Put all ingredients in the slow cooker.

Cook on HIGH for 6 hours or LOW for 8 to 10 hours.

Serve with crusty bread or over rice.
