Summer Corn Chowder

  • 4 oz bacon
  • 4 ears corn, removed from cob
  • 2 onions
  • 2 stalks celery, diced
  • 3 cans chicken broth
  • 5 oz potatoes, diced
  • 2 c half and half

Instructions

    Cook 1/4 inch pieces of bacon in a large, heavy pot over medium-high heat. Remove bacon and set aside. Discard all but 2 T of the bacon fat.

    Add onions and celery. Cook over medium-low heat until translucent, about 8 minutes.

    Add chicken broth, corn, and potatoes. Bring to a boil. Reduce heat and simmer until potatoes are tender, about 25 minutes.

    Add half and half. Simmer until soup is hot.

    Serve garnished with bacon.
