  • 0.8 each c. chopped dates
  • 0.5 each c. finely chopped peeled apple
  • 0.5 each c. raisins
  • 0.5 each c. water
  • 1 each c. plus 1 T. all-purpose flour
  • 1 each tsp. ground cinnamon
  • 1 each tsp. baking soda
  • 0.5 each tsp. salt (optional)
  • 2 each eggs
  • 1 each tsp. liquid sweetener

Instructions

    In a large saucepan, combine dates, apples, raisins and water.

    Bring to a boil; reduce heat and simmer for 3 minutes.

    Remove from heat; cool.

    Combine flour, cinnamon, baking soda, and salt, if desired.

    Stir into apple mixture and mix well.

    Combine eggs and sweetener; add to batter.

    Drop by tablespoonsful onto a nonstick baking sheet.

    Bake at 350ºF for 10 to 12 minutes.

    Yields 2 dozen.
