Squirrel with Rice

A Cajun recipe for Several young cut up squirrels.

  • Several young cut up squirrels
  • 1 cup uncooked rice
  • 3 tablespoons bacon drippings
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 1 stalk celery, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Brown squirrel in skillet with bacon fat.

    Remove squirrel from skillet and sauté garlic, onion, bell pepper, and celery in drippings.

    Return squirrel to skillet.

  4. 4

    Add remaining ingredients to skillet. Add enough water to fully cook rice. Cover and cook until rice is done and water is absorbed.
