  • 4 Bacon Strips ¼ cup splenda
  • 1 egg – beaten1/8 cup Vinegar ½ cup Water
  • 1 bag Fresh Spinach Leaves 2 eggs
  • ¼ teaspoon Salt 1 tablespoon Not-Starch

Instructions

    Cook the bacon until crispy and remove.

    Drain most of the bacon fat from the pan leaving only two tablespoons.

    Cook the shallot in the bacon fat for one minute.

  4. 4

    Add the vinegar, sugar, mustard, oil, salt, and pepper and bring to a boil.

    Add the bacon fat and shallots from the skillet to the vinegar mixture and whisk to combine.

    Make a roux with bacon drippings and flour to create a hot, thick bacon dressing.

    Add the spinach and mushrooms and toss to coat evenly.

    Sprinkle half the bacon and pour half the dressing onto the salad and toss well.

    Serve the remaining dressing on the side and top each plate with the remaining bacon.
