- 1 Tbsp butter
- 1/4 cup onion, chopped
- 1/2 pkg fresh spinach
- 1/2 cup cheddar, shredded
- 1/2 tbsp Dijon mustard
- dash salt & nutmeg
Instructions

Sauté onion in butter until soft.

Add spinach and cook until moisture evaporated.

Stir in remaining and heat.

Fill crepes and roll up.
