- 4 eggs
- 2 tbsp cilantro, chopped
- 1/3 cup heavy cream
- 1 tomato, diced
- 3 tbsp butter
- 1 Serrano chili pepper, chopped
- 2 tbsp scallions, sliced
- 1/4 tsp pepper
- 1/2 tsp salt
Instructions

Preheat the griddle to medium heat.

Melt butter on top of the hot griddle.

Add tomato and chili pepper and sauté for 2 minutes.

In a bowl, whisk eggs with cilantro, cream, pepper, and salt.

Pour egg mixture over tomato and chili pepper and stir until egg is set.

Garnish with scallions
