- 1 cup salt (uniodized) 1 ½ teaspoons Wright's liquid smoke
- 1 lb dark brown sugar ½ teaspoon seasoned pepper
- ½ teaspoon garlic powder 4 tablespoons molasses

Brine the fish first.

Air dry the fish for 3 hours +/- to allow a pellicle to form.

Place a small fan set on low blowing directly on the fish.

Smoke the fish using apple, alder, oak, or cherry wood.
