Slow Cooker Stiffado
Greek-style beef stew slow-cooked with onions, cinnamon, allspice, tomato sauce, and topped with crumbled feta. Serve over pasta or mashed potatoes.
Ingredients
- 1 tbsp vegetable oil
- 2 lb stewing beef, cut into 1-inch cubes
- 3 whole large onions, peeled and diced
- 4 whole cloves garlic, minced
- 0.5 tsp ground cinnamon
- 0.5 tsp ground allspice
- 3 tbsp red wine vinegar
- 1 0.5 cup tomato sauce
- 1 tsp white sugar
- 1 whole bay leaf
- 1 cup crumbled feta cheese

Heat oil in a skillet over medium-high heat and brown beef in batches. Transfer to slow cooker with a slotted spoon.

Reduce heat to medium; add onions to skillet and cook until soft. Add garlic, cinnamon, and allspice; cook 1 minute.

Add vinegar, tomato sauce, sugar, and bay leaf; stir well. Pour mixture over meat in slow cooker.

Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender.

Add feta cheese, cover, and cook on high for 10 more minutes. Discard bay leaf. Serve over hot buttered pasta or mashed potatoes.
