Slow Cooker Beef and Peppers

  • 2 lb lean round steak
  • 2 whole green bell peppers, thinly sliced
  • 2 tbsp dried minced onion
  • 1 cup beef broth
  • 2 tbsp low-sodium soy sauce
  • 0.5 tsp ground ginger
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce

Instructions

    Cut round steak into serving-size pieces.

    Place sliced pepper rings in the bottom of the crockpot, reserving a few for the top.

    Arrange beef on top of peppers, without stacking directly on top of each other.

    Mix beef broth, soy sauce, ginger, garlic, Worcestershire sauce, and dried onion. Pour over meat and peppers.

    Top with reserved pepper slices.

    Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours.

    Serve over steamed rice.
