- 4 cup chicken or vegetable broth
- 2 whole potatoes, diced
- 2 whole tomatoes, chopped
- 1 whole onion, chopped
- 1 whole zucchini, sliced
- 1 cup mushrooms, sliced
- 1 cup fresh spinach
- 2 clove garlic, minced

- 1 tsp fresh herb of choice (basil, thyme, or oregano)
