Simple Turnip Greens

  • 0 lb turnip greens
  • 1 lb salt pork
  • 3 quart water
  • 0.3 tsp black pepper

Instructions

    Remove and discard stems and discolored spots from greens.

    Wash greens thoroughly.

  3. 3

    Drain and tare greens in to pieces; set aside.

  4. 4

    Slice salt pork at 1-inch intervals cutting to but not through the skin.

  5. 5

    Combine salt pork, 3 quarts water, pepper and if desired sugar in a Dutch oven.

    Bring mixture to a boil.

  7. 7

    Cover, reduce heat and simmer 1 hour.

  8. 8

    Add greens and cook uncovered for 30 to 35 minutes or until tender.

    Serve with a slotted spoon.
