Seven Layer Casserole
A hearty slow-cooker casserole of ground beef, rice, corn, and bell pepper in seasoned tomato sauce — all layered and cooked low and slow.

- 0.5 lb ground beef, browned and drained
- 2 tbsp bacon bits
- 1 whole small onion, chopped
- 15 oz tomato sauce
- 0.5 cup water
- 0.5 tsp chili powder
- 1 pinch salt and pepper to taste
- 0.7 cup long grain rice
- 8 oz whole kernel corn, drained
- 0.5 cup chopped green bell pepper
Instructions

Place browned beef in bottom of crockpot. Top with bacon bits and onion.

Combine tomato sauce, water, chili powder, salt and pepper. Pour half over the ingredients in the crockpot.

Sprinkle rice over top. Add corn and green pepper.

Pour remaining tomato mixture over top.

Cover and cook on low for 5-6 hours or until rice is done.
