Seafood Casserole
Versatile seafood casserole with imitation crab, shrimp, peas and rice in a sour cream and tarragon sauce, topped with Parmesan. Customize with hot sauce, lemon, asparagus or fresh herbs.

- 1 lb imitation crab meat
- 0.5 lb frozen cooked small shrimp
- 10 oz frozen peas, thawed and drained
- 1 0.5 cup cooked white rice
- 0.3 cup chopped green pepper
- 2 tbsp chopped fresh parsley
- 1 tsp dried tarragon
- 1 cup reduced-fat sour cream
- 0.3 cup shredded Parmesan cheese
- 0 salt and pepper to taste

Preheat oven to 350°F.

Mix together all ingredients except Parmesan cheese. Add salt and pepper to taste.

Spoon into baking dish and top with Parmesan cheese.
