Scallops in Garlic Butter

- 1 0.5 lb sea scallops (large cut in half)
- 3 tbsp sliced almonds
- 0.3 cup butter
- 5 clove garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon zest, grated

Rinse scallops and pat dry; cut any large scallops in half. Set aside.

Place a large skillet or wok over medium heat. Add almonds and stir until golden, about 2 minutes. Remove almonds and set aside.

Add butter to the same pan. When melted, add garlic, parsley and lemon zest; stir for about 1 minute.

Add scallops in a single layer (work in batches if needed) and stir fry just until opaque throughout, about 3 to 4 minutes. Do not overcook.

Transfer scallops to a serving platter, top with toasted almonds and serve immediately.
