  • 1 onion
  • 1 Green pepper
  • 2 tortillas for each quesa dia
  • 2 lb. Monterey Jack cheese
  • 2 Tbs. finely chopped cilantro or parsley

Instructions

    Cook and clean shrimp.

    Chop set aside.

    Grate the cheese, set aside.

    Simmer sliced onions and green peppers with a little oil.

    Add salsa and shrimp.

  6. 6

    On a lightly oiled griddle, heat tortilla, add meat mixture and grated cheese.

    Top with another tortilla.

    Flip and melt cheese.

  9. 9

    Cut into quarters and serve.
