  • 3 peaches, pitted and diced
  • 1 tbsp. lime juice
  • 1/4 cup sweet red pepper, diced
  • 1 green onion, chopped fine
  • 4 tsp. fresh coriander, chopped fine
  • 1 tbsp. Jalapeno pepper, minced
  • 2 tsp. brown sugar
  • 1 tsp. vinegar
  • salt and fresh ground pepper to taste

Instructions

    Peel, pit and dice peaches and toss with lime juice in bowl.

    Add red pepper, green onion, coriander and Jalapeno.

    Stir sugar, vinegar, salt and pepper together until sugar is dissolved.

    Pour over peach mixture and toss.

    Serve with nachos.
