  • 10 cups tomatoes, peeled and chopped
  • 1 large onion, chopped
  • 6 Anaheim Peppers, seeded and chopped
  • 2 Pasilla Peppers, seeded and chopped
  • 2 Serrano Peppers (more as desired for more heat), seeded and chopped
  • 4 heaping tsp. Chopped garlic
  • 1/4 – 1/2 cup cider vinegar
  • 1 Tbs. Salt
  • 1/2 tsp. Cumin
  • 1/2 tsp. Cilantro (dry flakes), or fresh is better (2 Tbs.+)
  • 2 Tbs. Sugar, or more to taste

Instructions

    Mix all of the ingredients.

    Bring to a boil.

    Cook until liquid is reduced to desired consistency.

  4. 4

    Stir frequently to prevent scorching.

  5. 5

    Freeze in containers.
