- 8 small fresh mushrooms, halved
- small zucchini, cut into 1/4-inch slices
- small yellow pepper, sliced
- 1 small red pepper, sliced
- 1 small red onion, sliced
- 1 tablespoon white wine vinegar
- 1 tablespoon water
- teaspoons olive oil, divided
- 1/2 teaspoon dried basil
- 1/4 teaspoon sea salt
- 1/4 teaspoon pepper
- 1 prebaked, 12-inch thin whole wheat pizza crust
- 1 can (8 ounces) pizza sauce
- small tomatoes, chopped
- cups shredded part-skim mozzarella cheese

Preheat your griddle to medium-high heat.

Combine mushrooms, zucchini, peppers, onion, vinegar, water, 3 teaspoons oil and seasonings in a large mixing bowl.

Transfer to griddle and cook over medium heat for 10 minutes or until tender, stirring often.

Brush crust with remaining oil and spread with pizza sauce.

Top evenly with Griddle vegetables, tomatoes and cheese.

Tent with aluminum foil and griddle over medium heat for 5 to 7 minutes or until edges are lightly browned and cheese is melted.
