  • 1 pint half and half
  • 10 oz grated carrots (approximately 250 g)
  • 1 cup raisins
  • 1 cup cashew pieces
  • 1/2 cup sugar
  • 1/4 cup butter ( approximately 4 tablespoons)

Instructions

    Heat the half and half in a heavy bottomed saucepan to boiling and add the grated carrots, raisins and sugar.

    Boil the mixture till the liquid is reduced to 1/10th of the original amount.

    Melt butter in a frying pan and fry the cashew pieces.

  4. 4

    Mix well and serve hot.
