Easter Ham Pie

  • 2 count 9-inch refrigerated pastry crusts
  • 8 oz thinly sliced ham
  • 5 oz frozen chopped spinach, thawed and squeezed dry
  • 3 count eggs, at room temperature
  • 2 cup shredded mozzarella cheese
  • 15 oz ricotta cheese
  • 1 count small red bell pepper, thinly sliced

Instructions

    Preheat oven to 375 degrees F.

    Fit one pastry crust into a 9-inch deep-dish pie plate.

    Beat eggs in a large bowl, then mix in mozzarella, ricotta, and drained spinach.

    Layer the sliced ham and bell pepper strips over the bottom crust.

    Spread the cheese mixture over the ham.

    Top with the second pastry crust, crimping edges to seal. Cut several slits in the top.

    Bake 45 to 50 minutes until crust is golden and filling is set. Rest 10 minutes before slicing.
