Deli Potato Salad

  • 8 potatoes potatoes, boiled, cooled, and cut in chunks
  • 3 large hard boiled eggs, chopped
  • 0.5 lb salami, ham, or other favorite deli meat, cut in chunks
  • 3 dill pickles dill pickles, chopped
  • 1 onion onion, chopped
  • 2 apples apples, cored and chopped
  • 3 tbsp mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tsp salt and fresh ground pepper to taste
  • 1 tsp paprika

Instructions

    Mix potatoes, pickles, eggs, apple, and onion in a large bowl.

    Lightly fry salami and drain off excess fat. Let cool.

    Stir salami, mayonnaise, and seasoning into potato mixture.

  4. 4

    Chill for 2 hours before serving.

  5. 5

    Garnish with slivered red and green sweet peppers.
