Crock-Style Beans

Classic slow cooker New England-style beans: navy beans with salt pork, onion, molasses, brown sugar, and dry mustard.

  • 1 lb dry navy beans (2.5 cups), soaked
  • 4 oz salt pork, cut into small pieces
  • 1 cup onion, chopped
  • 0.5 cup molasses
  • 0.3 cup brown sugar, packed
  • 1 tsp dry mustard
  • 8 cup water

Instructions

    Bring beans and water to a boil in a large saucepan; simmer covered 1.5 hours. Drain, reserving 1 cup liquid.

    Transfer beans and reserved liquid to crockpot. Stir in pork, onion, molasses, brown sugar, and dry mustard.

    Cover and cook on LOW 10–12 hours or HIGH 6–8 hours.
