Creamy Peanut Soup

  • 2 tsp butter
  • 0.5 cup finely chopped celery
  • 1 whole clove garlic, finely chopped
  • 1 tbsp flour
  • 4 cup unsalted chicken stock
  • 0.5 cup light cream
  • 2 tbsp peanut butter
  • 0.3 tsp salt
  • 0.3 tsp cayenne pepper, to taste
  • 2 whole scallions, trimmed and thinly sliced

Instructions

    Melt butter in a heavy-bottomed pot over medium heat.

    Add celery and garlic; cook 2 minutes.

    Stir in flour; cook 1 more minute, stirring constantly.

    Whisk in the stock, peanut butter, salt, and pepper. Simmer for 15 minutes.
