Cream of Lima Bean Soup

- 1 cup dried lima
- 1 cup cream or milk
- 2 slice onion
- 4 slice carrot
- beans
- 3 pints cold water
- 4 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
Instructions

Bring the water to a boil and boil the lima beans for 5-10 minutes.

Turn off the heat and cover the pot.

Let the lima beans soak for 2 – 2 1/2 hours.

Drain and rinse beans and return to the pot.

Place 3/4 cup of beans into a net boiling bag.

When beans are tender, remove beans and blend soup.

Return beans to pot, add carrots and spices.

Add your remaining ingredients of milk, cottage cheese and parsley.

Cook till cheese is melted for about 15 - 20 minutes longer.
