  • 1 cup unsalted butter (2 sticks)
  • 3 tbsp all-purpose flour
  • 1/8 tsp red pepper (cayenne)
  • 1 dash Tabasco sauce
  • 2 tbsp onion juice or very finely minced onion
  • 2 cup heavy cream
  • 0.5 tsp seasoned salt
  • 3 tbsp dry sherry
  • 1 0.5 lb fresh lump crabmeat, picked clean
  • 4 slice buttered toast or puff pastry shells, for serving

Instructions

    In a double boiler with boiling water in the bottom, melt the butter.

    Blend in the flour, stirring until the mixture is smooth. Add the red pepper, Tabasco, onion juice, heavy cream, and seasoned salt. Cook, stirring slowly and constantly, until the mixture is thick and smooth.

    Add the crabmeat and heat thoroughly, stirring gently.

    When thoroughly heated, add the sherry. Mix well and let steep for 15 minutes over simmering water, covered.

    Serve over buttered toast or in puff pastry shells.
