Coffee Cakes (Brioche)

  • 1 cup scalded
  • 0.5 cup sugar
  • 2/3 cup butter
  • 14 cup flour
  • milk
  • 4 yolks of eggs
  • 2 yeast cakes
  • 3 eggs
  • 1/2 teaspoon extract

Instructions

    Mix the ingredients in a three quart container with a dough whisk or a large spoon.

    Let the dough rise in the refrigerator for up to five days.

  3. 3

    Punch down dough and place in pan.

  4. 4

    Roll out dough and cover with sugar, cinnamon, nuts.

  5. 5

    Reroll jelly roll style, forming into a ring.

  6. 6

    Cut sections with a scissors and form alternate pieces into a petal design.
