Christmas Fruitcake Cookies

A Carolina mountain recipe for Christmas Fruitcake Cookies.

  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 ea egg
  • 1/4 cup milk
  • 1 1/4 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp allspice
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped raisins
  • 1/2 cup snipped dried apricots
  • 1/2 cup chopped dates

Instructions

    Cream together oil and sugar.

    Add egg.

    Then blend in remaining ingredients.

    Drop by spoonfuls onto lightly oiled baking sheet.

    Bake in preheated 350 degree oven about 10 minutes.

    Cool on wire rack and store in tightly closed container.
