- 1 hen or fryer
- 5 tablespoons flour
- 5 tablespoons shortening
- 1 cup each of: Onion, Celery, Green pepper, chopped fine
- Garlic salt
- 1 teaspoon pepper sauce
- Salt
- Pepper
- Cayenne Pepper
- 4 quarts water
- 1 cup tomatoes, chopped

COOK chicken 'til done. CUT in bite size pieces.

BROWN flour in shortening 'til brown (roux); ADD onions, celery, green pepper, salt, Worcestershire sauce, pepper sauce; COOK 5 to 10 minutes on low heat.

ADD chicken to vegetables; COOK a few minutes.

POUR out fat where chicken browned leaving brown drippings.

TO this ADD broth, chicken, tomatoes. COOK slowly for 1 to 2 hours.

SERVE over hot rice.
