Celery Soup I

  • 3 cup celery (cut in
  • 1 slice onion
  • 0.3 cup flour
  • 10 0.5 cup milk
  • one−half inch pieces)
  • 3 tablespoons
  • butter
  • 1 pint boiling water

Instructions

    Put the oil in a large soup pot over medium heat, then add the onion and celery.

    Sauté for about 5 to 6 minutes.

    Pour in the vegetable stock and bring to the boil.

  4. 4

    Turn the heat down and simmer for 20 mins further, until the potatoes are falling apart and the celery is soft.

    Use a stick blender to purée the soup.

  6. 6

    Pour in the milk and blitz again.
